Saumon rôti au four et sa chiffonnade de poireaux

Le saumon est un poisson gras,
dont la saveur est agréablement rehaussée
par le goût piquant de la moutarde à l'ancienne.
A la chaleur, les graines de moutarde libérent
des huiles essentielles très aromatiques.

2 cc de moutarde à l'ancienne
4 cs de crème fraîche
2 jeunes poireaux parés et taillés en chiffonnade
4 darnes de saumon (moi j'ai acheté un filet que j'ai tranché)
ciboulette
sel et poivre du moulin

Dans un saladier, mélangez la moutarde et la crème fraîche,
puis ajoutez-y les poireaux. 
Etalez cette chiffonnade dans un plat allant au four,
dressez le saumon dessus et enfournez
dans un four préchauffé à 200°/th.6 pendant 10 à 15 mn,
jusqu'à ce que le poisson soit tendre, mais encore rosé au milieu.

Salez et poivrez.
Servez avec la chiffonnade à la moutarde, parsemez de ciboulette
et présentez avec les pommes de terre.
